Optimal transport has gained significant relevance in various fields, including image processing, machine learning, and control theory. We introduce the fundamental problem in optimal transport, which is to find a coupling between two distributions that minimizes a given cost function. Then we explore how an approximation of the optimal transport problem is connected to the Schrödinger bridge, a problem that comes from large deviations theory, and how this can be applied to estimate the flow of pollutants in water networks.
